Vibrant red fruit welcomes the nose with aromas of wet stone and subtle hints of forest floor. The palate delivers a wild red raspberry/cherry licorice that is consistent with its light red color, while savory smoked meat and spices linger in the background to wrap up with a layered, velvety textured finish complimented by fine-grained tannins. This well-balanced wine pairs well with any tapas dish or a coq au vin.
The Salengo Grenache comes in from the highest elevation in the Coble Ranch Vineyard. Planted on gravelly loam and red clay soil, the fruit allows for a complimentary balance of min- erality and red fruit characteristics.
Once received at the Winery, the Salengo Grenache is optically sorted and fermented in a small lot. Optimizing the time on the skins for a concentrated fruit and tannin profile, the Grenache has an extended cold soak before fermentation and then pressed in a traditional basket press. The Grenache is aged in neutral French oak barrels.
