2019 Sauvignon Blanc
Opening with tropical aromas of passionfruit and guava complemented by hints of nectarine, this light bodied wine is refreshing and easy to drink. Prominent bright citrus flavors are balanced subtle minerality. Exquisitely crisp with a lingering finish, this wine would be an ideal pairing with light summer foods, such as grilled vegetables or a crudité platter.
Our 2019 Sauvignon Blanc was hand-harvested in three lots, on July 26, July 31 and August 5, 2019, and was pressed slowly and gently using our bladder press. The juice was then cold-settled for 48 hours, then racked before beginning the fermentation process. Each lot was inoculated and fermented separately in stainless steel barrels with different strains of yeast selected for aromatic qualities and flavor profiles. The fermentation was kept at a steady 45° Fahrenheit, and once it was complete, the wines were kept sur lies and stirred bi-weekly for four months to enhance the body of the finished wine. The wine was then racked off its lees, before being filtered and bottled in February of 2020.
