Our 2019 Semillon is full-bodied white wine with aromas of cinnamon and toasted sesame seeds. Richly flavored, with a smooth finish and subtle savory flavors, this wine is complex without overwhelming the palate. Prominent flavors of hazelnuts and orange blossom are balanced by subtle notes of pineapple and limes. This wine can easily be enjoyed on its own but would also be an ideal pairing with richly flavored but light foods, such as grilled shellfish or a simple roast chicken.
Our 2019 Semillon was hand-harvested on August 16, 2019 and was immediately pressed using our bladder press. The juice was then cold-settled for 3 days, then racked before beginning the fermentation process. The juice was inoculated with two strains of yeast, one to increase aromatics, the other to heighten the texture and body of the finished wine, and was fermented very slowly, eventually finishing the fermentation after 27 days. A partial Malolactic fermentation was performed, and the wine was then racked off its lees. While we have had a small amount of Semillon growing in our vineyard for several years, this is the first year this wine has been bottled on its own. The objective was to have a low-alcohol white wine, and a wine that would be easily distinguishable from our other white wines.
