
2021 DRY CREEK VALLEY CHARDONNAY
TASTING NOTES
Aromas of passion fruit and pineapple and hints on hazelnuts. The tropical flavors are a lovely compliment the citrusy ripe lemon peel on the palate. This wine's complexity is expressed in its light bright beginning and smooth, silky finish. Pair it with soft cheeses and walnuts.
PRODUCTION NOTES
Our 2021 Chardonnay is from Andrew's Vineyard in the Dry Creek AVA, west of Healdsburg. Our block contains Dijon clones 76, 95, and 96. After harvest, the fruit was sorted, then pressed whole-cluster using a Vaslin Bucher Bladder press for minimal oxygen exposure.
After pressing, the juice was cold-settled for three days, then inoculated with a proprietary yeast blend, and fermented in 50% new and 50% once-used French oak barrels. The wine also went through a full malolactic conversion and was stirred sur lies to enhance the structure and body.
