Beautiful aromas of citrus, lime, floral blossoms. This wine is fresh on the palate and presents layered complexity, zesty and racy acidity, and a finish of layered lemon, lime and minerality. Exquisitely crisp with a lingering finish, this wine would be an ideal pairing with light summer foods, such as grilled vegetables or a crudité platter.
The Sauvignon Blanc is planted in three different blocks in the Coble Ranch Vineyard. The blocks vary in location throughout the vineyard with the most recent being planted in 2017, all in prime alluvial and clay soils in ner warm climate to accentuate the ripe tropical flavors that can be expressed by this wine grape variety. The Sauvignon Blanc was harvested in three picks; each is specifically calibrated to achieve optimal flavor profiles and fruit extraction.
The Sauvignon Blanc is pressed in a bladder press upon arrival at the winery, it is then racked to a tank to be cold-settled. Once the juice is settled, we transfer it to a new tank where it is inoculated with various yeast strains. The Sauvignon Blanc is aged in 100% stainless steel.
